- 2/3 cup no sugar added ketchup
- 1/3 cup stevia brown sugar see recipe notes
- 1.5 tbsp apple cider vinegar
- 1/2 tsp dijon mustard
Meat Loaf
- 1 tbsp olive oil extra virgin
- 1 medium yellow onion diced
- 3 cloves garlic minced or grated
- 1 tsp sea salt
- 3/4 tsp black pepper
- 2 tsp paprika
- 1 tsp dried thyme
- 1.5 tbsp Worcestershire sauce
- 1.5 tbsp dijon mustard
- 2 eggs large
- 2 lbs ground turkey (93/7)
- 3/4 cup keto breadcrumbs
Instructions
- Pre-heat your oven to 350°F
- Whisk together the ketchup, brown sugar, vinegar, and Dijon mustard in a medium bowl. Set aside.
- Heat olive oil in a small pan over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook 1–2 minutes more, just until fragrant. Remove from heat and let cool.
- In a large bowl, whisk together the salt, pepper, paprika, thyme, Worcestershire sauce, Dijon mustard, eggs, and ¼ cup of the glaze.
- Stir in the cooled onion mixture.
- Add the ground turkey and breadcrumbs and gently mix until just combined.
- Divide the mixture into two portions and shape into loaves on the prepared baking sheet. If you have a silicon loaf pan, you can use it to form the loaves and then press out onto the pan.
- Spread the remaining glaze over the tops.
- Bake for about 45 minutes, until fully cooked.
- Remove excess fat, transfer to a platter, slice, and serve.
